Being a bake-aholic / instructions for decorating cupcakes

Hallo Ihr Lieben, ihr wisst ja, dass ich gerne backe. Jucken Euch auch im November schon die Finger, weil Ihr Weihnachtsplätzchen backen möchtet? Also bei mir ist das so und ich bin solch ein Back-aholic, dass ich jedes Jahr mehr Sorten Plätzchen backen möchte.




Das ist in den letzten Jahren so ausgeartet, dass ich an den Wochenenden regelrecht im Plätzchen-Back-Wahn von früh Morgens bis spät Nachts in der Küche verbracht habe. Das wurde meinem Freund irgendwann zu bunt und jetzt habe ich - solange ich noch einen Vollzeitjob habe - Plätzchenbackverbot.




Auf der Suche nach "Ersatzdrogen" habe ich ein eigenes Cupcakes-Rezept entwickelt - traumhafte Winterapfel-Cupcakes mit Vanille-Topping und Schneeflocken-Deko. Schließlich habe ich nur ein Plätzchenbackverbot und kein Cupcakebackverbot! Ich finde, die Cupcakes sehen richtig gut aus, deshalb hier meine kleine Anleitung für Euch, falls Ihr Cupcakes auch mal winterlich dekorieren möchtet:




1. Weiße Schokokuvertüre vorsichtig im Wasserbad schmelzen. Achtung: Weiße Schokolade ist viel hitzeempfindlicher als Dunkle. Wegen dem hohen Zuckeranteil in weißer Schokolade karamelisiert der Zucker bei zu hoher Hitze schnell aus und macht Klumpen. Am besten, Ihr macht zuerst Wasser im Topf heiß - es dürfen sich keine Bläschen bilden, dann ist das Wasser schon zu heiß - dann zieht Ihr den Topf von der Platte und hängt nun erst die Schmelzschale mit der in Stücke gehackten Kuvertüre rein. Jetzt rühren, bis die ganze Schokolade geschmolzen ist.

2. Nun die flüssige Schokolade mit einer dünnen Tülle in Form von Schneeflocken auf beschichtetes Backpapier spritzen. Eine Schneeflocke sollte kleiner als der Durchmesser eines Cupcake-Förmchens werden. Lieber die Schokolade etwas dicker spritzen, damit die Schneeflocke am Ende nicht zu fragil wird. 150 g Schokokuvertüre reichen für 10 - 12 Schneeflocken.

3. Die Schneeflocken auf Backpapier nun auf einem Stück Pappe am besten im Gefrierfach für 10 min hart werden lassen. 

4. Jetzt könnt Ihr Eure Schneeflocken vorsichtig mit einem scharfen Messer halbieren. Die halben Schneeflocken könnt Ihr jetzt in die Creme stecken, die Ihr auf den gut ausgekühlten Cupcakes verteilt habt.

5. Cupcakes jetzt kühl aufbewahren, sonst schmelzen Euch die schönen Schneeflocken weg.

Dear readers, you might know that I love to bake. Do you also feel the urge to bake Christmas cookies in November? Well, I do feel it and I am such a bake-aholic that every year I bake more and more sorts of Christmas cookies.

Over the last few years, the whole Christmas baking degenerated so much, that  in my bake-mania I spent two whole weekends from early in the morning till late at night in the kitchen, baking and decorating. One day, my boyfriend had enough and he forbade me to bake Christmas cookies, as long as I still have a full-time job.

In search of of a substitute, I developed my own fabulous Winterapple Cupcakes recipe with vanilla frosting and snowflake decoration. After all, it is only forbidden for me to bake Christmas cookies, there is no wintery cupcakes ban! I think, the cupcakes look really great, so I would like to share the instructions for wintery cupcakes decoration with you:





1. Melt white chocolate coating carefully in a double boiler. Attention: white chocolate is much more sensitive to heat than dark one. Because it contains so much sugar, white chocolate caramelizes when it is too hot and goes lumpy. I recommend to heat water in a small sauce pan - there mustn't be any bubbles, otherwise it is already too hot - then remove sauce pan from source of heat. Now hang the bowl containing the chopped white chocolate into the hot water. Stir until chocolate melted completely.

2. Now fill melted chocolate in an icing bag with a narrow decorating tip. Apply chocolate onto baking parchment in shape of snowflakes. One snowflake should be smaller than the diameter of a baking cup. Apply the chocolate in thick lines in order to prevent the snowflakes to get too fragile. You should get 10 - 12 snowflakes out of 150 g white chocolate.

3. Put baking parchment with snowflakes onto a piece of cardboard and let the snowflakes cool in the freezer for 10 min. 

4. Now you may carefully divide your snowflakes into half using a sharp knife. Decorate your cooled down cupcakes with halves of snowflakes by putting them into the frosting.

5. Keep your cupcakes cool in order to prevent the snowflakes from melting.

Have fun decorating your cupcakes in a wintery style!
